Lawrence Convention Center.  The event features 150 crafters and makers selling clothing, jewelry, home decor and other locally handmade gifts.  On-street parking and in City-owned lots is free on Saturdays in December.

Dear Farmers Market fans,
 
Its been a while since I have done a shout out to the East Liberty Farmers Market community.  But, I want to send this message to let everyone know that I will be transitioning out of managing the three market booths - Kew Park Coffee Bar, California Connection and Wheel and Wedge Cheese.  
 
I first got involved in the market back in February 2007, after the fire.  I offered the farmers to help get the word out that the market was still open.  So I started building an email list based on an initial one started by the Kennedy’s.  Then we started to build a web site, and send out weekly update blasts.  I was spending so much at the market that, in 2010 I decided to open the Coffee Bar with my wife Cristy and two children Marco and Maria.  It was a great opportunity for the kids to learn some valuable work skills.  One thing led to another and soon enough had three booths!  I learned so much and really enjoyed the experience - particularly getting to know farmers and food producers and all of you.
 
But things change, and now Marco and Maria are off at college and my day job has gotten more demanding.  So Cristy and I decided that its time to move on.  At the same time, I wanted to keep things going at the market, so developed a transition plan.  Here is the plan:
 
Wheel and Wedge Cheese
Alix Wiggins is going to take over.  She is a perfect fit!  Alix and I have been working together for nearly 2 years now.  I have developed great respect for her knowledge and work ethic.  A recipient of the 2014 Slow Food Pittsburgh Cheese Scholarship, Alix attended the American Cheese Society Conference - so she knows a lot about cheese.  She currently also runs the cheese program at Arriba Winery and also manages a number of wholesale cheese accounts.  I expect she will continue to focus on local and regional cheese, but I am sure will add her own twist.  Alix is a new young entrepreneur, so please show her your support.  If you have not met her yet, please stop by and say hello!
 
Kew Park Coffee Bar & California Connection
We are very lucky to have another family take over and run this as a small business!  John and Diana Volker are going to take over.  You may know Diana as she has been helping out at the Kennedy Farm Meat Stand.  Initially, they plan to run the coffee bar and California Connection pretty much as is.   So we will continue to have Kew Park Jamaican Coffee, olive oil and dried fruit.  I am sharing all my farmer contacts with them.  But I would expect that over time they will make some tweaks and changes.  One thing that is very exciting is that they are developing a line of home made mixers that they will add to the product offerings!  Keep an eye out for these in the near future!
 
This Saturday will be my last day at the market.  Please stop by and say hello.  There is no need to say good-bye since I will still be around helping with the transition and of course continuing to be a loyal customer of the market. 
 
I want to thank each and every of the farmers who run the market - The Kennedy’s, the Greenawalts, the Hileman’s and of course Rick Zang.  Each one makes a huge contribution to the market, and also to helping us get our booths up and running.  Thanks so much!

Update for Saturday, April 4th

Hello Farmers Market Fans.  I just want to remind everyone that the market is open this Saturday as usual.  It will be well stocked with great food items for your holiday table.  We are expecting a good crowd!

I also want to let you know that will be having a special event- a visit by Chad and Lauren Townsend from Millies Homemade Ice Cream.  Chad is a well know chef in town- his most recent position being head chef at Salt of the Earth.  Millies is a relatively new venture specializing in artisan ice cream.  They will be at the market each Saturday starting in June.  But they want to stop by this Saturday to introduce themselves.  Free samples will be shared-  chocolate, butter pecan, coconut sorbet, + 1 more perhaps. They will also have pints and 1/2 pints for sale.

One of my favorite things to do with a peck of apples that I get from Tim is make apple butter. In fact, for Christmas everyone I know received a jar of the versatile spread. I'm going to walk you through step-by-step on how to make apple butter without using a single measuring cup!

1. Start with a variety of apple.

The majority of recipes out there call for a specific variety of apples. I found that if I put my trust in Tim, he gives me a nice mix of apple that produce an excellent product. 

2. Core and slice apples.

I use an apple corer/slicer to get through the dozens of apples. I don't bother peeling off the skins. They get blended with the rest of the pot contents in step 5. 

3. Add liquid.

Most apple butter recipes I've read call for adding sugar at this point. I personally don't think you need it. Apples are naturally high in sugar. I do however add between a 1/2 cup-1 cup of liquid (typically cider from Kistaco, but you can use water) to the batch, enough to moisten and help the apples to steam. 

4. Throw in a large pot.

I prefer to use my 6qt crock pot, because I can let it run all night or while I'm at work with the lid on. When I wake up or come home, I'm greeted by the wonderful smell of caramelizing apples. If you are using a dutch over, use low heat and don't leave it unattended.

After a few hours you'll notice that the slices have softened. At this point I use my immersion blender. (You can also use a food mill. You do get a little bit of a smoother finished product, but you have to deal with dirtying another bowl.) 

Let your pureed apples cook a few hours more with the lid off. If you are using the crockpot, turn it up to a higher setting. You'll notice that the mixture will reduce by as much as a half and it will thicken significantly. As the apples caramelize, the mixture will turn varying shades of brown. I typically let it go for another hour or two on the higher setting, but let yours go until you like the look, consistency and taste. 

5. Spice it up!

This is my favorite part (well maybe my second after eating it). I really like a spicy apple butter so I throw in cinnamon, and grate fresh ginger into mine. 

Feel free to experiment. I would just recommend being conservative with your spices and tasting often. 

6. Can it. 

If you'd like to make your apple butter self stable (or give it away as a gift), can it.

7. Enjoy it

I use apple butter in my oatmeal in the morning, on bread as a snack and sometimes in place of sugar for some quick breads.
